The steamed buns bought outside never taste good. If you want to eat healthy ones, you have to make them yourself. Jujube brown sugar is a warm baby in winter. It is healthy and delicious with mixed grains.

Dissolve brown sugar in boiling water, dissolve dry yeast in warm water at 35 degrees Celsius, and cut the jujubes soaked in advance (just run in warm water for 20 minutes) into small pieces, not too small, as they will slowly break into pieces during the kneading process

Stir the flour in the basin evenly, pour in the yeast water and brown sugar water (the temperature drops to about 30 degrees), stir while pouring, and mix into a flocculent form

Pour in the dates, add warm water as needed and knead into a dough. The dough should not be too hard, because there are dry oatmeal, which will absorb part of the water

Cover and ferment in a warm place. The dough with added sugar will rise quickly. The temperature in my home is high, and it can rise to double in 30 minutes

Add a little baking soda to the risen dough and knead it evenly. If you have enough time, knead it for a while, so that it will rise better when steamed. After kneading it, make it into a steamed bun base

Put it into the steamer, cover the pot and ferment for the second time, about 30 minutes

Turn on the cold water pot and steam for 25 minutes. Turn off the heat and simmer for another 5 minutes
