I have been thinking about making something and finally decided to make soft oatmeal. Because I have used domestic matcha before, the color and taste are really not good. When kneading by hand, pay attention to the ratio of eggs to water to avoid sticking to your hands. First pour in water, eggs, salt, and fine sugar

Then pour in the matcha powder and adjust it slightly according to your own taste, reduce or increase it

Pour in the whole wheat flour and high flour and sprinkle in the yeast powder, start kneading until expanded

Add softened unsalted butter and continue kneading until a film forms and enters the fermentation stage

While the dough was fermenting, we started making the mochi. Mix all ingredients except butter and mix well

Put it in a steamer and steam until cooked, let it dry for a while and add butter. Use disposable gloves to knead and absorb

When the dough is almost fermented, dip your fingers in flour and prick it. If it does not shrink or collapse, the fermentation is complete

Divide the dough into 6 equal parts, deflate and knead into round balls and let rest for 10 minutes

Roll the dough into a tongue shape, and roll one side into a flat shape. Divide the mochi into six portions, put them into plastic bags and roll them into similar sizes. Place on top of the dough

Add the honey beans, brown sugar, walnuts or cranberries that suit you according to the taste... Then roll it up with the seam facing down and place it on the baking sheet to ferment for 2 times

After 2nd rise, sprinkle some flour to cover and cut into buns
