Mapo Tofu
Overview
Mapo tofu is a delicious food for patients with high blood pressure, high blood fat, and high cholesterol. Prepare ingredients.

Cut the tofu into evenly sized pieces.

Boil in cold water for two minutes.

Cut the meat into mince, mince the onion, ginger and garlic and set aside.

Add light soy sauce, salt and starch to the meat and marinate for five minutes

Pour oil into a hot pan. When the oil is 60% hot, pour in the minced meat and stir-fry until it changes colour.

Add Sichuan peppercorns and fry until fragrant.

Add the onion, ginger and garlic and stir-fry until fragrant.

Then pour the bean paste in and stir-fry until the red oil comes out.

Finally, pour in the tofu and stir-fry evenly. Add boiling water and bring to a boil over high heat until a little water remains. Add water starch to reduce the juice. Add pepper and serve.
