Overview
This is an appetizing braised beef noodle dish. The soup is bright red in color, mellow in flavor, crispy in beef, slightly spicy and fragrant. It is simple and easy to operate and is suitable for consumption in early winter.

Cut the beef into small pieces and soak in water

Put the soaked beef in cold water into a pot, heat it over high heat until it boils and foams, then clean it, drain it and set aside.

Prepare the ingredients and gather all the ingredients for later use.

Heat a large pot with cold oil, add all ingredients except chives, and stir-fry until fragrant.

Add rock sugar and continue to stir-fry until the rock sugar melts. Add beef sauce, tomatoes and chives and stir-fry until fragrant.

Pour in the drained beef and stir-fry evenly, then add dark soy sauce and stir-fry until the beef is coloured.

Pour in an appropriate amount of water, about 2/3 of the pot full, heat over high heat until boiling, then turn to low heat and simmer for about 2 hours. Add appropriate amount of salt to the stewed beef soup.

Add appropriate amount of water to the pot and start cooking noodles

Add the cooked noodles to the beef soup, add an appropriate amount of beef, eggs and vegetables, and you have a very delicious bowl of braised beef noodles.
