Braised Tofu with Prawns
Overview
I bought nearly a pound of shrimp a few days ago and used more than half of it to make steamed shrimp with rice noodles. I deliberately left some braised tofu so that the tofu could absorb the umami flavor of the shrimp, and ended up being more popular than the shrimp!

Prepare the ingredients (the tofu you bought is best soaked in water).

Trim off the tentacles of the prawns and use a toothpick to pick out the shrimp line at the second or third joint of the prawns.

Dispose of all shrimps and wash them well and set aside.

Cut the tofu into small pieces and prepare some garlic and ginger.

Heat oil in a pan, add garlic and ginger and stir-fry until fragrant.

Then add a bowl of water.

After the water boils, add the tofu and add appropriate amount of salt.

When the water is about half boiling, add the prawns and continue to cover the pot and simmer.

When simmering until one-third of the water is left, add the prepared corn starch and gravy (raw starch gravy: cornstarch, water, and soy sauce, mix well).

Finally, reduce the juice over high heat and season.
