Overview
Chicken is rich in protein, and beer is everyone’s favorite wine in summer. Beer-roasted chicken uses beer instead of water. After frying, the chicken is poured directly into beer and stewed. The flavor of beer is incorporated into the meat during the stewing process, making the whole dish more flavorful

Cut the three-yellow chicken into pieces, wash them, blanch them in a pot to remove the blood, and skim off the foam

Remove the blanched chicken, drain and set aside. Add onion, ginger, garlic, dried chili, aniseed, and cinnamon. Set aside

Pour oil into a hot pan, add rock sugar, onion, ginger, garlic, dried chili, aniseed, and cinnamon and stir-fry until fragrant. Stir-fry the rock sugar until it turns into caramel color

Add in the chicken and stir-fry until browned

Add seafood soy sauce and dark soy sauce and continue stir-frying

Pour in the beer over the chicken, bring to a boil over high heat, simmer over low heat for half an hour, add salt and chicken essence, and reduce the juice over high heat
