Appropriate amount of shrimp. Appropriate amount of golden clams, clean the shell and set aside. Cut 2 tomatoes with a cross-cut knife and soak in boiling water for 5 minutes. After 5 minutes, tear off the skin and cut off the persimmon stems. Slice and shred the tomatoes and then cut them into small dices. Put them on a plate and set aside.

Heat the pot, remove an appropriate amount of oil, add diced tomatoes, stir-fry over high heat, crush the diced tomatoes with the back of a spoon while frying, until they are melted. After stir-frying, add an appropriate amount of water, galangal, lemon leaves, lemongrass, and dried chilies. Mix well and cover the pot. Bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes. After 30 minutes, remove all the residue.

Add an appropriate amount of tom yum paste, shrimp paste, pepper, sugar, and salt to the pot, then add the shrimps, golden clams, and white mushrooms, mix well, and simmer over medium heat for 10 minutes. After 10 minutes, beat off the foam, add an appropriate amount of coconut juice, fish sauce and chicken essence, mix well, squeeze in the lime juice, turn off the heat and cook.
