Steps
-
Prepare dough ingredients.
-
Prepare mochi ingredients.
-
Put the dough ingredients first, liquid, then powder, salt and sugar diagonally, (except butter and yeast) into the inner barrel of the bread machine, and select a dough mixing program.
-
When making noodles, steam mochi, milk, corn starch, water-milled glutinous rice flour, and sugar in a deep plate and mix well. Cover with plastic wrap, prick a few holes with a toothpick, and put it in the microwave on high heat for 3 minutes.
-
Take out the mochi plate and stir it up with a spoon, then add butter while it's still hot.
-
When it is not too hot to touch, use gloves to knead the butter into the mochi dough, cover with plastic wrap and refrigerate until ready.
-
A program dough and the dough is ready.
-
Cover the bread pan with a damp cloth and let sit for 30-60 minutes.
-
Add the softened butter and yeast to the rested dough (I forgot to put the yeast when I took the photo, but added it later). Then perform a kneading process and knead the dough to the expansion stage.
-
Divide the mixed dough and mochi dough into three equal portions and cover them with plastic wrap.
-
Take one piece of dough and roll it into an oval shape.
-
Roll out the mochi dough into a smaller piece than the cocoa dough, and place the mochi dough on the cocoa dough.
-
Spread a layer of bean paste filling, then add cranberries and walnuts (the walnuts should be removed from the oven at 150 degrees for 10 minutes and chopped).
-
Bring the two sides together and pinch the closing edge tightly.
-
Make the remaining two (the shapes are as you like) and put them in the oven to ferment. Place a bowl of hot water under the oven to increase the humidity.
-
It will take about 40 minutes to ferment. Take it out and preheat the oven to 180 degrees for 10 minutes.
-
Sift the bread flour into the fermented bread dough, cut into buns, and cut into patterns according to your preference.
-
Place in the middle rack of the preheated oven at 180 degrees for about 25 minutes. After baking, remove and move to a baking sheet, dry until hand warm and store in a fresh-keeping bag. Cut into pieces before eating. (The mochi soft oatmeal was still very delicious the next day)
