Slice the eggplant and make a large opening in the middle (do not cut it off) and stuff it with meat filling.

Chop the green and red peppers, shredded ginger and scallions into shreds and stir-fry until cooked. Pour in the Thai sweet chili sauce, soy sauce and two teaspoons of salt. Sauce is done.

Pour the fried eggplant clips into the pot, stir-fry with the sauce, add water and simmer until cooked.
