Have materials ready.

Add ginger and cooking wine to the pot and boil the water, pour in the chicken and blanch it for 3 minutes.

Remove and drain.

Heat oil in a pot, add ginger, garlic, star anise, and bay leaves and stir-fry until fragrant. Add chicken and stir-fry. Add salt, cooking wine, and sugar and stir-fry evenly.

Transfer to a soup pot, pour an appropriate amount of water and bring to a boil over high heat, then reduce to medium to low heat and simmer for half an hour.

Add the mushrooms and cook for another 10 minutes.

Finally add wolfberry, salt and pepper and cook for one minute.

Sprinkle with chopped green onion.
