Overview

The details of braised pork rice vary slightly from place to place, but the basic flavor is similar. The taste is fresh and sweet, mainly because the Taiwanese soy sauce is slightly sweet, but the sweet and salty blend is very appropriate and will not make people sick. The authentic Taiwanese braised pork rice[1] also comes with a piece of pickled pork rice. The pickled food is usually pickled radish. The special yellow and orange pickled radish slices look very cute. However, when eating braised pork rice, pickled radish slices are used. The slightly pungent sour and salty taste sublimates the smell in your mouth from oily and sweet to refreshing, allowing you to clean up the rice in the bowl more happily. (I didn’t buy suitable pickled radish and replaced it with Wujiang pickled mustard, which is also excellent) The fusion of Taiwanese braised pork and Yunxiang rice is a wonderful combination! This is my child’s favorite meal! Not one of them!

  1. Pork belly, shiitake mushrooms, carrots and onions, cut into 1cm cubes of vegetables and meat, eggs, cooked in water, shelled, washed and set aside

  2. Heat the oil in a pan until it is 70% hot, add the shredded ginger and sauté slightly until fragrant, add the diced carrots and onions and stir-fry

  3. When you smell the aroma of onions, pour in the diced pork belly and continue to stir-fry. The pork belly must be fat and thin in order to make delicious braised pork rice!

  5. Add the mushrooms and stir-fry for about a minute, add boiling water, peeled eggs, salt, thirteen-spice dark soy sauce, cooking wine, bay leaves, cinnamon, ginger slices, and rock sugar. The water must cover the ingredients. After boiling, simmer over medium-low heat for 30 minutes.
