Soak dried fungus in water. I soaked it overnight, maybe 5 hours or so.

Boil hot water in a pot and remove from the boil.

Chop ginger, garlic, and red pepper.

After my fungus was so big after soaking, I cut it into small pieces one by one and threw away the bad ones and roots. Cut into pieces and put in a large bowl, add salt, vinegar and chicken powder to marinate.

Sauté ginger, garlic, and chili until fragrant. I thought it would be especially fragrant if peppercorns were added, but I didn't have any, so I added five-spice powder.

Pour the boiling oil directly onto the pickled fungus and mix well.

Plate and sprinkle with sesame seeds.
