Add 2 grams of salt, 0.5 grams of alkali, and 140 grams of warm water (below 30 degrees) to the flour in portions, and squeeze the dough with your hands.

Knead repeatedly to form a smooth dough.

Shape into a long strip and add five equal dough ingredients.

Make each dough into a round shape, then roll it into long strips, brush the surface with oil, cover with plastic wrap and rest for more than an hour.

During the resting time, adjust the filling. Add an appropriate amount of refined salt, first-grade fresh soy sauce, oyster sauce, and minced ginger to the meat filling. Add 15 grams of water in batches and stir in one direction until it becomes sticky and elastic.

Add appropriate amount of seasoning oil (fried with scallions, ginger, green onions, and star anise) and stir evenly.

Add 25 grams of flour, 5 grams of salt, and 1.5 grams of five-spice powder into a small bowl. Pour in 50 grams of 200-degree hot oil. Stir while pouring to make a thin pastry. Let cool and set aside.

Finely chop green onions and set aside.

Take a piece of dough that has risen, flatten it, roll it into a long strip with one side slightly wider, and brush it with a layer of pastry.

Put the meat filling on the wide side, put a layer of chopped green onion on top, and fold in half on both sides.

Hold the dough with your hands and stretch it out, first roll it to the right, then roll it to the left, in order to wrap the filling, and roll it while stretching.
