It is also called one side and three eating because you have to repeat it several times to add noodles with chopsticks. Shaanxi people call this process of adding noodles. It is said that picking noodles has a profound meaning. During the Chinese New Year, we also hope for good luck. One pick brings gold and silver, two picks bring good luck, and three picks bring peace and auspiciousness.

Separate the fat and lean meat of the pork belly and cut them into thin slices.
