Wash the carrots and cut them into pieces about 3 cm long, set aside;

Wash the pork belly and prepare to blanch it, put it in a pot under cold water, add cooking wine and Sichuan peppercorns to the water to remove the fishy smell, boil for about 10 minutes, take it out, cut it into strips about 2 cm thick; put it in a wok and stir-fry slowly over medium-low heat;

After frying out the excess fat in the meat, add bean paste, white sugar, and dark soy sauce. Continue to stir-fry over medium-low heat. After the meat is colored, add an appropriate amount of water, ginger slices, star anise, and bay leaves. Cover with a lid and bring to a boil over high heat. Turn to medium-low heat and simmer; (Add high heat to cover the meat by 2 cm)

After about 1 hour, add the carrots, bring to a boil over high heat, then turn to medium to low heat and continue cooking;
