Steamed Egg with Green Pepper and Shiitake Mushroom

I had steamed eggs like this at Sakura Villa near my home last weekend and it was delicious! I want to try it today and it turned out pretty good. If you follow my method and add a little less oil, it will be perfect!

Mince the onion, ginger, and garlic. I am used to cutting a lot each time, which is enough for cooking for a day! Not all of this amount is used for this cooking!

Beat the eggs and add twice as much water, probably! Stir well, I never filter, there is no such high requirement! You need to add some salt to the egg liquid! Appropriate amount

Bring the pot to a boil and put in the egg liquid. I didn't cover it with plastic wrap and added a lid. This will take a little longer than plastic wrap!

Add soybean oil to the pot, heat the oil and stir-fry the onion, ginger and garlic until fragrant! Don’t make the oil temperature too high!

Add our pre-diced vegetables! Add light soy sauce and stir well! Turn off the fire! There is salt in the egg liquid, so you can add a little less to this! If your taste is light, you can just add light soy sauce without salt!

This time I pressed the timer, 15 minutes, and the surface solidified! In this state, it’s time to add our fried diced vegetables!

Cover the pot. I didn’t add a cover this time, for fear that the color of the green pepper would be too strong! Continue steaming for 4 minutes and use chopsticks to test whether the steamed eggs are completely cooked! If it’s steamed, turn off the heat!
