Overview
Get this skill was developed more than ten years ago. At that time, the nanny hired by my aunt's family, Sister Liu, was from Shaanxi. It is said that Sister Liu had also worked as a nanny for a senior leader in Shaanxi for several years. She also opened a noodle shop herself, so she must be very good at craftsmanship. I learned Shaanxi’s oily noodles and Hanzhong Liangpi from Sister Liu. I have benefited from them so far and have taught many friends.

Add eggs and salt to flour

Mix the flour into a crumb and let it sit for 15 minutes

Knead into a ball, cover and let rest for 15 minutes

Knead the dough evenly again and knead until it is smooth: the surface is light and the hands are light. Wake up for 15 minutes

Take the dough out and place it on an oiled cutting board

Shape into long strips

Divide the long noodles into 12 equal parts

Apply oil to the surface of each dough

Place it on an oiled plate, cover it with plastic wrap and let it rest for 15 minutes. If you are not in a hurry to eat it, you can put it in the refrigerator for a few hours

When the noodles are ready, prepare onions, ginger, garlic and rapeseed

Take a dough block and roll it into a rectangular piece, slightly flattening the long sides, then use a rolling pin to press a stripe in the middle of the dough piece

Tear it apart from the indentation of the dough sheet and it becomes pulled noodles

After the water is boiled, stir-fry the rapeseed, and then cook the pulled noodles until cooked

Soak the noodles in cold water

Divide into two bowls

Add onion, ginger, garlic, soy sauce, salt, vinegar and chili powder on top. You can put a little sesame seeds

After the oil is hot, pour it directly on the chili powder
