Wash and peel off the skin of the prawns, remove the shrimp lines, drain the water and set aside. Cut the ginger into thin strips, cut the green onions into sections, and cut the garlic in half;

Put the prawns in a bowl, add a tablespoon of Huadiao wine, a little salt and pepper and marinate for more than 10 minutes;

Heat a wok, add an appropriate amount of vegetable oil, pour in the shrimp and fry until golden brown;

Add shredded ginger, garlic cloves and scallions to the remaining oil in the pot and sauté until fragrant, add a tablespoon of hot pot base and a spoonful of soybean paste and sauté until fragrant;

Pour in five tablespoons of water, one tablespoon of light soy sauce and one teaspoon of fine sugar and stir-fry for a while;
