Prepare the ingredients

Wash the fish, make a few diagonal cuts on both sides of the fish, add cooking wine, green onions, ginger slices, pepper, and salt, and apply evenly on the fish, covering both sides, so that it is easier to absorb the flavor

Chop the garlic and set aside

Mix starch and flour together, add a little water, and make a thick batter

Dip the fish all over in the batter (my batter is a little thinner, but it doesn’t affect the taste)

Pour oil into a non-stick pan and heat it. When the oil is hot, put the fish wrapped in batter into the oil pan and fry over low heat until both sides are golden brown (a little more oil is needed. Use a spoon to continuously pour oil on the fish during frying)

Leave the base oil in the pot, sauté the minced garlic until fragrant, add 3 teaspoons of sugar, 2 teaspoons of light soy sauce, 2 teaspoons of vinegar, 2 teaspoons of cooking wine, and about 4 teaspoons of tomato paste. Mix evenly, then add about 3 grams of salt and 3 grams of chicken essence to taste. Pour the prepared sauce on the fish
