Cut the pork belly into thin slices.

Remove the old tendons from both ends of the beans, wash and cut into small pieces.

Pour an appropriate amount of oil into the pot, add the pork belly slices and stir-fry over low heat until the oil spits out, add the star anise and stir-fry until fragrant.

Add chopped dried chili pepper, minced ginger, and minced garlic and stir-fry until fragrant. Pour in cooking wine and soy sauce and stir-fry for a while.

Add the beans and stir-fry, add salt, sugar and five-spice powder and stir-fry evenly.

Pour hot water to cover the beans, bring to a boil, scoop out a small bowl of soup and set aside.

Place the fresh noodles on the beans, cover and simmer over medium-low heat for about 5-6 minutes until the soup reduces.

Open the lid and pour the scooped soup into the pot along the edge. Continue to cover and simmer for about 5-6 minutes until the soup is basically dry.

Use chopsticks to pull out the loose noodles and stir evenly.
