[Stewed Hairtail Fish and Tofu]---Uncle Benshan’s specialty dish
Overview
I learned from the media that hairtail fish stewed with tofu is one of Benshan Dabu’s favorite dishes. In 2009, Uncle Benshan got seriously ill. After recovering from the illness, he went to the kitchen and personally made this hairtail fish stewed with tofu for everyone to taste. Hairtail is the most common economic fish, but it is stewed with tofu. As a person who grew up by the sea, I have never tasted it. I have never even heard of this cooking method in our small coastal town, so this time I used my own food thinking to make this hairtail stew with beans. Fu, there is no reference material, just relying on the taste of food, which may not be the same as Uncle Benshan’s cooking techniques and taste, but after tasting my own results, I feel very good about myself, so I will also record this innovative hairtail method that I have figured out in my food diary.

Ingredients: 250g hairtail, 200g northern tofu

Ingredients: onion, ginger, garlic, dried red pepper Seasoning: peppercorns, aniseed, salt, light soy sauce, oyster sauce, sugar, pepper, cooking wine

Wash the hairtail and cut it into segments. Cut a knife on both sides of the hairtail segment. Cut the northern tofu into pieces the same size as the hairtail segment

Add oil to the pan and fry the hairtail segments and tofu pieces separately until the skin turns golden brown

Fry until the skin turns golden brown and set aside

Heat oil in the pot, add seasonings and stir-fry until fragrant

Then add light soy sauce, oyster sauce, and sugar in sequence

Put the fried hairtail segments and tofu cubes into the pot and simmer over low heat
