Scallion Quinoa Mashed Potato Pancakes

I made some mashed potato pancakes for breakfast today, and specially added some quinoa to fry them together!

Soak quinoa for half an hour, then add water to a pot and cook for 15 minutes

Drain and set aside

Add water to potatoes and heat in microwave until soft

Place in a plastic bag and roll into mashed potatoes with a rolling pin

Add appropriate amount of salt, pepper and chicken powder to taste

Add cooked quinoa
-
Add appropriate amount of chopped green onion

Mix well
-
Take an appropriate amount of mashed potatoes and roll into a round ball
-
Add an appropriate amount of salad oil to the pan and put the mashed potato cakes

Fry until golden brown on both sides and serve
