【Shanghai】Strawberry Black Forest Birthday Cake
Overview
The eight-inch birthday cake I gave to a friend, well, it was a copycat, but there is still a gap between it and the real Black Forest cake. I hurriedly made it after get off work, and I was a bit rushed. Fortunately, I have all-purpose chocolate chips. After finishing the basting, I spread the chocolate chips directly on the surface, which perfectly covered the uneven surface.

First prepare an eight-inch chiffon. Separate the egg whites and egg yolks, squeeze a few drops of lemon juice into the 5 egg whites.

Add 50 grams of sugar to the egg whites three times, and beat until the meringue becomes stiff. When you lift the whisk, you can see a small upright triangle. Store the beaten meringue in the refrigerator first.

Mix 5 egg yolks, 60 grams of coffee liquid, 20 grams of milk powder, 30 grams of corn oil, and 2 grams of salt.

Using a whisk that has beaten egg whites, beat the mixture from the previous step at low speed until smooth.

Sift in cake flour and fold into egg yolk batter. At this point preheat the oven to 150 degrees.

Take the beaten meringue out of the refrigerator, add the egg yolk batter in two batches, and stir gently and quickly to form a cake batter.

Pour the cake batter into an eight-inch round mold.

Place in the middle and lower racks of the oven at 150 degrees for about 50 minutes. The temperature and time of this step should be adjusted according to your oven.

After baking, turn it upside down to cool. After cooling completely, unmold it and cut it into three slices. In a hurry, I divided the cake into different thicknesses, and one slice was a little thin.

While the cake is baking, work on the chocolate. Use Dove dark chocolate, put it in a dry and clean bowl, and melt it over water.

Melt the dark chocolate and put it in the refrigerator. It will freeze into blocks in 15 minutes. Then use a spoon to scrape out the chocolate chips and set aside.

Pour 0.5 liters of cream into a basin and whip until it has texture. Since there is no need for piping, you don’t have to beat it too stiffly.

Take a piece of cake, spread it with cream, spread it with yellow peaches, and spread it with cream again until the three slices of cake are used up, and put the thin slice of cake in the middle.

Spread the remaining cream on the surface as evenly as possible. It doesn't matter if it is uneven, because the chocolate chips can perfectly cover the uneven surface. After applying it, draw a circle with cream in the middle, and use the blank space inside the circle to write. It was already late at night, so I didn’t take pictures of the subsequent steps, I just wanted to finish it quickly.

In the next step, use a spatula to slowly spread the chocolate chips on top. Do not hold it directly with your hands. The warmth of your hands will cause the chocolate chips to melt immediately. Spreading the chocolate chips on the cake requires a little patience. After laying the chocolate chips, put the sliced strawberries in a circle, and then use the melted chocolate to write. I originally wanted to write "Happy Birthday", but I didn't know how to write with chocolate, so I could only write hastily like this.

The finished picture was taken the next morning before going to work, and it still looks good under natural light. The finished picture taken at night will not be used to show off.
