Fried Noodle Nest
Overview
Noodle nest is one of the unique snacks in Wuhan. It can be seen everywhere in the streets and alleys, (Wuhan people call breakfast breakfast). It is a kind of rice milk mixed with rice and soybeans, sprinkled with black sesame seeds, fried in a pan, and soon a round cake with thick and hollow sides, yellow color and crispy aroma is made. It tastes soft in thick parts and crispy in thin parts, which is called noodle nest.

Wash the rice and soybeans and soak them overnight (it is best to put them in the refrigerator in hot weather).

Pour away the soaking water from the soaked rice and soybeans.

Add a small amount of water into a food processor and blend into soybean and rice milk. (Also add ginger slices and stir together)

Add the beaten rice milk, chopped green onion and salt and mix evenly.

Mix into flowable rice milk.

Unique iron spoon for noodles, black sesame seeds for later use.

Put a little more oil in the pot and heat it with a spoon until it is 7.8% hot.

First sprinkle the sesame seeds into the bottom of the spoon, then scoop a spoonful of rice milk into the spoon along the edge, leaving the convex part in the middle free.

Gently put it into the oil pan and fry until the dough nest automatically separates from the iron spoon.

Fry until golden in color and remove from the pan.
