Shepherd's purse and shrimp wontons

The delicious soup of shepherd's purse and shrimp wontons can be eaten in one bowl. It has both staple food and soup. The whole family loves to eat it. Dumplings rely on fillings, and wontons rely on good soup. Are the cooked wontons not delicious? Maybe the soup wasn’t mixed properly! The shepherd's purse and shrimp wontons are cooked like this, and the soup is delicious and tastes like spring! I think wontons taste better than dumplings, probably because the soup is more moist and warmer when eaten in winter. When I was shopping for groceries, I saw shepherd's purse stuffing for sale. I can eat spring fresh food in winter. I'm really greedy just thinking about it! The most common way to eat shepherd's purse is to wrap shepherd's purse in dumplings. It's been a dry day lately, and I just want some moist soup, so I'll make the shepherd's purse into small wontons. There's so much left in the freezer, and when I'm busy at work in the morning, I can just cook a portion of it and it'll be a hot, stomach-warming breakfast.

First prepare the ingredients needed to make wontons

Peel the fresh shrimps and chop them into pieces, chop the green onion and ginger and put them into the filling basin together with the meat filling

Crack an egg into the filling, add salt, light soy sauce and sesame oil in sequence and stir clockwise with chopsticks

Beat the meat filling until firm and sticky, then add chopped shepherd's purse

After thoroughly mixing the shepherd's purse and meat filling, the dumpling filling is ready

Place an appropriate amount of filling in the middle of the wonton wrapper, and spread a little on the four sides of the wonton wrapper

There are many ways to wrap wontons. I use the simplest flat-sided wrapper. I roll up the small edges to seal them and pinch them diagonally.

Wrapping the wontons is only half the battle, the key step is to cook the wontons

Crack an egg and beat it into pieces, chop green onions, seaweed and dried shrimps and set aside

Pour an appropriate amount of water into the soup pot. After the water boils, cook the wontons

Heat a wok over medium heat until it feels hot in the palm of your hand, pour in cooking oil and heat, then pour in the egg liquid and spread it into a thin egg pancake

Cut the golden and tempting egg pancake into thin strips and set aside

Place seaweed, shrimp skin and some chives on the bottom of the bowl, add a little sesame oil and light soy sauce

Take out the cooked wontons and put them into a bowl. Spread a layer of shredded eggs on top of the wontons and sprinkle some chives

Pour in the hot soup and stir, and the delicious wontons are ready to be eaten hot!
