Ingredients
Steps
-
Soak the dried powder in water to soften it and control the moisture before use
-
Dried shrimp, soaked until fragrant, shredded shiitake mushrooms, chopped scallion into sections, shredded ginger, shredded radish and set aside
-
Beat the eggs, cut the lean pork and fat meat into green onion leaves and cut them into sections
-
First heat up the oil in the pan and fry an egg. This step can prevent the fried noodles from sticking to the pan
-
Heat the oil pan again, add the fat and fry it first to release the oil.
-
After the fat becomes oily and changes color, add shredded ginger and green onions and stir-fry until fragrant
-
Add the lean meat and stir-fry until it changes color, then add the dried shrimps and mushrooms and continue to stir-fry evenly.
-
Add a uniform amount of oyster sauce, light soy sauce, cooking wine, and a little salt (don't put too much salt here, otherwise the mushrooms will be inhaled and other ingredients will be tasteless, and the mushrooms will be too salty).
-
Next, stir-fry the noodles with chopsticks and a spatula, shaking them so that the noodles are evenly colored and heated evenly. Add an appropriate amount of salt and cooking wine and continue to stir-fry until the noodles become soft and colored
-
After frying until fragrant, add eggs and radish and fry.
-
Add the cabbage and continue to stir-fry until the leaves become soft. Taste whether the noodles are fragrant and soft. If the taste is OK, sprinkle with chopped green onion and MSG and stir-fry evenly.
-
Take it out of the pan and the fragrant Wenzhou fried noodles are ready!
