Glutinous Rice Cake with Bean Paste and Purple Sweet Potato
Overview
In my kitchen, sweet potatoes, purple sweet potatoes, potatoes and yams are basically kept in stock for a long time. When cooking rice, you can steam some potatoes like this on top. Eat less rice and potatoes as part of the staple food. Both sweet potatoes and purple potatoes are my favorite ingredients. The yellow sweet potatoes were stored from last autumn to this year. After being steamed, the inside is sweet and soft, like cheese. The elegant purple color of purple sweet potato always makes me fall in love with it. Therefore, potatoes are often used to make various snacks. Today I am making the simplest purple sweet potato glutinous rice cake with bean paste. The homemade bean paste is sweet but not greasy, with a beautiful and eye-catching purple color on the outside, and paired with the crispy sesame seeds on the surface, it is so fragrant.

Steam a purple sweet potato.

Add appropriate amount of glutinous rice flour. (I put a little more glutinous rice flour and added a little hot water)

Knead into a dough.

Divide into 6 portions.

Also prepare 6 portions of homemade bean paste and roll into balls.

Flatten the small purple sweet potato dough, add bean paste and wrap it up.

The technique is similar to making glutinous rice balls, with the ends facing down.
