Hot and sour lotus root
Overview
Lotus root when eaten raw can clear away heat and promote fluid production, cool blood and stop bleeding. When used cooked, it can nourish the spleen and stomach, benefit blood and promote muscle growth. Stir-fry it with sauerkraut, it's sour and spicy and appetizing and goes well with rice.

Wash lotus root, peel and cut into thick slices

Cut into cubes, blanch quickly in boiling water, drain and set aside

Heat oil in a pan, sauté minced garlic

Pour in diced lotus root, salt, dried or pickled chili peppers, and a little ginger powder and stir-fry evenly

Pour in the sauerkraut, stir-fry a few times and serve
