Cut the boiled pork belly into thin strips. I used cooked pork belly, but you can also use raw pork belly. Add cooking wine and salt to onion and ginger water, cook the pork belly and remove it.

Core the pepper and cut into thin strips

Peel the potatoes, slice them, and rinse them with water so they don't stick to the pan when frying. Don’t cut the slices too thin, just about 2 mm thick

Chop the green onions and smash the garlic

Heat oil in a pan, sauté onions and garlic

Add chopped chili pepper, stir-fry until fragrant, add Pixian bean paste, stir-fry until fragrant

Add the potato slices and stir-fry quickly. Do not fry the potato slices for too long or they will lose their texture and become easily broken.

Fry the potato slices until half-cooked, add the peppers, and stir-fry until cooked through.

Add salt and stir well. I am used to adding salt step by step, which makes it easier to stir-fry and absorb the flavor. You can also add salt all at once. This depends on personal habits
