Chestnut Roast Chicken

Peel and peel the chestnuts, and clean the chestnut flesh.

Peel the garlic and cut into two large pieces of ginger. Wash the star anise and bay leaves.

Wash the chicken breast and cut into 2cm pieces. You can also choose meat from chicken wings, chicken legs and other parts.

Heat oil in a pan, add ginger slices and chicken and stir-fry until browned. Add the star anise and bay leaves and stir-fry until the surface of the chicken turns brown.

Add cooking wine, bean paste, light soy sauce, dark soy sauce and sugar and stir-fry until fragrant.

Add water to cover the chicken and simmer over medium heat for 30 minutes. Add chestnuts and garlic cloves and cook for 30 minutes to reduce the juice. Add chicken essence and stir-fry evenly before serving.
