White Jade Mushroom and Tremella Chicken Soup
Overview
Tremella is mostly used to make sweet soups. In fact, it’s also good to add some to chicken soup because it’s rich in gelatin and feels thick after cooking.

Chop the chicken legs into small pieces, put them in a pot with cold water, add a little cooking wine and blanch until the foam is removed, remove and set aside. (It’s OK to buy a whole chicken and chop it into small pieces.)

Tear the white fungus into small florets and set aside.

Wash the white jade mushrooms and set aside.

Put the white jade mushroom, red dates, wolfberry, and cardamom into the rice cooker. After boiling, add the ginger slices and blanched chicken pieces and cook for 30 minutes.

Add the white fungus and simmer for another 20 minutes.

Just add a little salt and white pepper according to your taste.
