Grilled Eggplant
Overview
When I lived with my brother, I remember that the eggplant he cooked was particularly delicious! Suddenly I miss the taste of eggplant. I specially sent a message to ask my brother how to cook delicious eggplant. I tried making it today. Of course, it is not as good as my brother's, but it still tastes good. The fried eggplant tastes crispy on the outside, soft and tender on the inside, and very fragrant! However, the disadvantage is that it is a bit oily, so be careful if you are trying to lose weight! After eating, I remembered that I had to put on another layer of fat! Haha~😄

Have an eggplant ready.

Chop the garlic.

Cut the eggplant into small pieces.

Cut into pieces, wash them in water, drain and set aside.

Coat the drained eggplant evenly with a layer of starch, not too thick.

Heat oil in a pot until it can be quickly stirred by inserting chopsticks.

Pour in the eggplant and stir with chopsticks to prevent sticking.

Fry until the surface becomes puffy, remove and drain the oil, then put it into the oil pan and fry again, then remove and drain the oil (in order to let the eggplant release the oil).

Pour a small amount of oil into the pot, add minced garlic and stir-fry until fragrant.

Pour in the eggplant and add a spoonful of bean paste.
