Golden needle mutton in sour soup
Overview
Yesterday, I was cleaning out the refrigerator and found a bag of mutton rolls, which seemed to be left over from the last time I had hot pot. I had just forgotten them in the corner😓. What kind of dish should I make? Seeing that I still have tomatoes and enoki mushrooms at home, let’s make a simple mutton in sour soup. I usually eat fat beef in sour soup. This is my first time using mutton. Not to mention, the taste is not bad. The mutton is tender and tender, with strong tomato flavor. The day needles are crisp and tender. It is sour and appetizing. It has just rained in the past two days to cool down. After a bowl of soup, I feel warm and comfortable

Steps
-
A group photo of the ingredients: a handful of enoki mushrooms (cut off the roots), one piece of lettuce, a bag of mutton rolls, two tomatoes, a small piece of ginger, three or four cloves of garlic, two small pieces of shallots, one coriander, and three millet peppers
-
Wash tomatoes, enoki mushrooms and lettuce, select and wash coriander and green onions, peel and wash ginger and garlic, wash millet and pepper and set aside
-
Boil water in a pot, add tomatoes and blanch them for a few minutes. The surface of the tomatoes will be marked with cross patterns for easy peeling
-
Add a little cooking wine to the mutton rolls to remove the fishy smell, mince the green onion, mince the ginger and garlic, cut the millet and pepper into small pieces, chop the coriander and set aside
-
Peel the tomatoes and cut them into small pieces, set aside
-
Boil hot water for blanching tomatoes, blanch enoki mushrooms, take them out and set aside
-
Heat the pan with cold oil, add green onion, white ginger, garlic, minced millet and pepper, stir until fragrant
-
Add tomato cubes and sauté until the tomatoes become thicker. If you like a stronger tomato flavor, you can also add some tomato paste
-
Add two tablespoons of red pickled pepper. The most delicious thing about making beef sour soup is to add yellow bell peppers. After eating it at home, it is also delicious with pickled peppers, and it is not too spicy
-
Add water, as much or as little as you like, more will be soup, less will be vegetables
-
Simmer the soup for about five minutes, then add the enoki mushrooms
-
Take a large bowl and place washed lettuce on the bottom of the bowl. If you are worried, you can blanch the lettuce before proceeding
-
Add a little light soy sauce to freshen it up
-
Taste for saltiness and add a little salt to taste
-
Take out the cooked enoki mushrooms and place them on the lettuce
-
Add the mutton rolls to the soup and blanch until cooked
-
Although the mutton is said to be cooked as soon as it is blanched, if you are afraid of parasitic bacteria and are afraid of uncooked gastrointestinal problems, you can cook it for a while. I cooked it for two minutes and it was still very tender
-
Pour the mutton rolls into the bowl with the soup
-
Sprinkle with chopped coriander and serve
