Overview
Endive is a specialty wild vegetable in Northeast China. It has a slightly bitter taste, cold nature, and has the effect of clearing away heat and detoxifying. Late spring and early summer are a good time to eat this wild vegetable. People in my hometown like to eat radicchio, which is considered a special delicacy. It can be eaten in various ways, such as dipping it in sauce, making croquettes, making steamed buns, etc. Today I am making special fried buns, a delicious way to eat wild vegetables from my hometown.

This is endive.

After washing with clean water, soak it for more than 1 hour, changing the water in the middle

Boil water in a pot. When the water is boiling, put in the radicchio and blanch it. After the water boils, you can take it out. Place in clean water and let cool.

Take out, dry and chop into pieces

Cut the pork into small pieces.

Put 3 tablespoons of oil in the wok, fry the pepper until fragrant, add the meat cubes and stir-fry.

After the meat changes color, add 1 tablespoon of soy sauce and bring to a boil.

Chop the wild vegetables, add the fried meat, chop the shallots and add them. Add salt, oil, oyster sauce, and your favorite seasonings and mix well to form a filling.

Mix the dough before making the filling. It should be moderately soft and hard. After it is mixed, make the dough and roll it out

Form into large dumplings and place in a greased pan. Fry over low heat until the bottom of the dumplings is slightly brown.

Add boiling water to half the height of the dumplings. Cover and simmer over low heat.

After about 10 minutes, simmer until dry.
