Prepare the ingredients: as shown in the picture.

Cut the processed hairtail into two pieces, add ginger, pepper, salt and cooking wine, mix well and marinate for a while.

The marinated hairtail is coated with a layer of crispy powder.

Put an appropriate amount of oil in the pot. When the oil temperature is 60% hot, add the hairtail fish and fry it.

Fry until golden and crispy on both sides.

Clip it out and set aside.

In another pot, pour in the sweet and sour sauce and bring to a boil over high heat.

Add the fried hairtail and simmer for about five minutes (I made the soup a little too much).

Transfer to a plate and garnish with some chopped green onion.
