Quinoa and Shrimp Salad with Vinaigrette
Overview
I am very grateful to Gourmet World and Amazon for giving me the opportunity to participate in this product review event. The product for this experience is Betis Extra Virgin Olive Oil provided by Amazon. Using olive oil to make a vinaigrette is the first thing I think of!

-
Soak the quinoa for 2 hours in advance, changing the water several times to remove color and astringency. Then add water to the pot and cook for 15 minutes and simmer for 5 minutes
-
Take it out, rinse with pure water, drain and set aside
-
Wash the shrimps, drain the water, add some cooking wine, cracked black pepper and salt and marinate for a while
-
Blanch vegetables, drain, and set aside
-
Add a small amount of Betis extra virgin olive oil to the pan
-
Add the marinated shrimps and stir-fry until the shrimps change color and set aside
-
Prepare ingredients for oil and vinegar sauce
-
Make a mixture of vinegar and oil in a ratio of 1:3, take a small bowl and add Betis extra virgin olive oil
-
I didn't add vinegar and used fresh lemon juice
-
Add honey
-
Add some salt and cracked black pepper and mix well
-
This is a well-mixed vinaigrette
-
Put quinoa and mixed vegetables into a bowl

Add fried shrimps
-
I also added chopped cooked walnut kernels

When eating, pour on the oil and vinegar sauce and mix well
