On days like this, a bowl of steaming big wontons is the most satisfying thing! As an atypical southerner, I can count the number of times I have made dumplings at home. My mother has never made wontons. Of course, I had never made wontons before this time. Recently, I ate shepherd's purse wontons several times at a snack bar outside the company. I thought it was delicious. Although shepherd's purse looks ordinary, it tastes good. It has its own unique fragrance, but the smell is not as strong as coriander. Not overpowering the guest, but secretly youthful.

Pick and wash the shepherd's purse, blanch it in water and immediately pick it up. After running it through cold water, squeeze out the water.

Chop the shepherd's purse into a large container, add an appropriate amount of salt, and mix evenly.

Next, I started to chop the meat. I used pork belly. The filling needs a little fat so that it will not be too dry. Pure lean meat will not taste good. Add a little ginger when mincing the meat. It will be better if you chop the ginger first and then mix it.

Place an egg in the minced meat, add an appropriate amount of salt, a little soy sauce and cooking wine, mix well in one direction, and then pour it into the shepherd's purse.

After mixing well, add appropriate amount of chicken essence to taste. I usually don’t add chicken essence when cooking, but I feel that if I don’t add some fillings, the taste will not be so fresh

Everything is ready, you can start making wontons. The wonton wrappers sold outside are relatively hard, so soak the four sides with a little water first.
