Stuffed Bitter Melon Oil Tofu

Stuffed bitter melon is a specialty here. Basically every household will make it several times every summer, and once it is made, it can last for two or three meals.

Prepare all ingredients (chop dace and pork into minced meat, soak glutinous rice one hour in advance).

.Put the minced dace meat, minced pork and glutinous rice together, add an appropriate amount of salt, oil, rice wine, cornstarch, and soy sauce, mix well, and beat with your hands for ten to fifteen minutes (this way the stuffing will not fall out easily and will be more fragrant).

Cut the bitter melon into sections with a diagonal knife and scoop out the seeds with the handle of a spoon.

Wash the dug bitter melon and drain the water.

Clean the fried tofu and make a small opening with a knife.

Heat oil in a pan, add appropriate amount of star anise, garlic, dried onions and ginger slices and sauté until fragrant, then turn off the heat.

Then use a spoon to stuff the meat into the bitter melon and fried tofu and put it in the pot.

Add appropriate amount of water (the amount of water should almost cover the bitter melon).

Simmer until the water dries up and then season appropriately (because the filling has already been seasoned, it is best to taste it before seasoning).
