  1. Wash the spinach and soak the vermicelli in warm water for a while to soften.

  2. Wash purple cabbage.

  3. Boil water in a pot and add the vermicelli. It will take about 3-4 minutes for the vermicelli to be cooked. Take it out.

  4. The removed vermicelli should continue to be soaked in water, otherwise it will become sticky.

  5. While the vermicelli is passing through the water, prepare chopped green onion and minced garlic.

  6. Remove the vermicelli and drain the spinach and cabbage. Blanch and then rinse in cold water.

  7. Put the blanched spinach, cabbage, and vermicelli together.

  8. In the bowl, add thirteen spices of salted chicken essence, soy sauce, oil, vinegar, a little more vinegar, sugar, chili oil, sesame seeds, chopped green onion and minced garlic. Mix well.

  9. Heat the oil in the pot, add it to the mixing bowl when the oil is hot and smoking.

  10. Pour the juice into the spinach bowl and stir evenly.

  11. Stir well and serve.

  12. You can cut the vermicelli with scissors in advance. I didn't cut mine because it was too long when eating.
