Sesame milk cookies
Overview
I saw many people on the Internet complaining that baking powder contains aluminum, which is not good for the health, but some snacks should always be used in moderation, so I bought two cans of aluminum-free baking powder from the Internet. The price is much more expensive than ordinary ones, but it is still bearable, so I opened a can and tried making sesame cookies. On the surface, it is not much different from ordinary baking powder. In my heart, I may feel safer and healthier.

Put 1/2 cup of milk, 1+1/4 cup of self-raising low-gluten flour, 1/3 tsp of aluminum-free baking powder, 1/2 tsp of sugar, and 1/8 tsp of refined salt into the bread machine, stir to form a dough, stop the machine, add sliced butter, turn it on again, and stir to form a dough.

Place a large bowl, coat with a layer of vegetable oil, add dough, cover with film, and place in a warm place to rise for 60 minutes.

After the time is up, place it on the chopping board and rub it a few times to remove air bubbles, then cover it with film and let it relax for 10 minutes.

Use another bowl, add 3 tablespoons of lard and 2/3 cup of self-raising low-gluten flour, and knead into a ball.

Then roll it into a long square, about 3 mm thick. In fact, it doesn't matter if it is thicker or thinner. The thicker one will be relatively crispy, and the thinner one will be relatively crispy.

Sprinkle sesame seeds on the surface, roll it with a rolling pin to let the sesame seeds embed in, then flip the other side and brew in the same way. There are sesame seeds on both sides. When you sprinkle the sesame seeds for the second time, use your fingers to pinch a little salt and sprinkle it on the surface.

Use a mold to cut out the dough and preheat the oven to 350°F.

Put the dough on the baking sheet and let them rise for 20 minutes. Use the Bake function at 350°F for 12 minutes, and the Broil function at Low for 3 minutes. If the oven does not have the Broil function, you can consider extending the time by about 3 minutes. In short, whether it is high or low heat, turn on the box light before the time is up, observe frequently, and bake the biscuits until they are not too deep golden brown.
