Sauerkraut and tripe
Overview
I ate sauerkraut tripe in a restaurant, more specifically sauerkraut tripe. It is a halal dish. It is stir-fried with sauerkraut like the sauerkraut fish. It is eaten with wild pickled peppers. It has the crispness of sauerkraut and the hot and sour taste of pickled peppers. The beef tripe tastes very chewy and tough. It is really an appetizing meal. Pickled peppers, commonly known as fish peppers, are a unique seasoning in Sichuan cuisine. Pickled peppers are spicy but not dry, spicy and slightly sour. Pickled peppers are tender and crisp, which can increase appetite and help digestion and absorption.
