Cut the tofu into small pieces.

Pour water into the pot, add appropriate amount of salt, add tofu and blanch it.

Remove and drain.

Dice the green and red peppers, wash and tear the fungus into small pieces and blanch them in a pot of boiling water until cooked. Dice the onions and chop the garlic.

Sprinkle an appropriate amount of dry starch into the drained tofu and mix well so that each piece of tofu is evenly coated with starch.

Fry in a 60% hot oil pan until the surface is golden and crispy, remove and drain.

Pour the green and red peppers into the oil pan and quickly blanch for 5-6 seconds, drain and set aside.

Leave oil in the pot, add minced garlic and onion and saute until fragrant.

Add steamed fish soy sauce, oyster sauce, sugar, and 1 small bowl of water and bring to a boil.

Pour in water starch to thicken the gravy.
