Beautiful pineapple cake as a New Year souvenir (stuffing fried in bread machine)

The Spring Festival is less than ten days away, and it’s time to start making souvenirs again. The super classic pineapple cake comes to mind. Pineapple cake is also called Wanglai in Taiwan, which means auspiciousness and is especially suitable for gift giving. After adding cherry blossoms, it adds a sense of aesthetics and looks very good. Since it is a homemade pineapple cake, the filling is of course made by myself, pure pineapple, without adding a single bit of winter melon. Therefore, it is not sweet at all, with the unique sweetness and sourness of pineapple, and the taste is more to my liking. This time I used the lazy method to make the pineapple filling, and used a bread machine to fry the filling. It really saved me trouble and effort. I admit that I am a lazy person. If you like it too, then go ahead and do it.

Soak the salted cherry blossoms by hand for more than 1 hour, then drain the water with kitchen towels and set aside.

Remove the hard core from the pineapple and chop the other parts into thin pieces with a knife.

After chopping the pineapple, if there is gauze, wrap it with gauze and squeeze out the pineapple juice as much as possible. If not, use a strainer like me. But it’s really time consuming and I feel like I have to buy gauze.

.Pour the chopped pineapple and other ingredients in the filling into the bread bucket and start the stir-frying process. I fried the recipe for 50 minutes.

Stir-fry until the pineapples can hold together and stop. Then pour them out and let them cool to room temperature.

Next we make the dough. Beat the softened butter a few times with a whisk to make it smooth.

Add powdered sugar and beat with an electric whisk until fluffy and slightly white.

Then add the egg liquid in 3 batches and beat evenly with an electric egg beater.

Mix all the flour in the dough and sift it into the butter and egg mixture, and mix evenly with a spatula. Just stir until the dry powder is no longer visible.

.Divide the dough and filling into 16 portions, roll them into balls and set aside. The dough I divided is about 18g each, and the filling is 11g each.

Take out a piece of dough, flatten it and put the filling in the middle.

Place it in the tiger's mouth and slowly close it, wrap it up and reunite it. All doughs are processed the same way.

Shape the dough into a rectangle slightly smaller than the mold, put it into the mold, press the four corners with your hands, and then use a small spatula to slowly flatten the dough.

.After all the dough is pressed, take out the salted cherry blossoms that have been soaked in advance to absorb the moisture and place them on the dough.

Finally, put it into the preheated oven, set the upper and lower heat to 160 degrees Celsius, middle layer, and bake for 25 minutes.

After baking, let the pineapple cake cool completely before removing it from the mold.
