Fried Dumplings with Vegetarian Filling
Overview
It’s Chinese New Year, and every household will make some dumplings. Dumplings can be steamed, fried or boiled. Today I used the oil used to make a vegetarian stuffing and lightly fried it. It was particularly delicious.

Just cut the leaves of Chinese cabbage into thin strips.

Cut the leeks into small pieces and add salt to squeeze out the water.

Crack two eggs in the evening, add appropriate amount of five-spice powder and salt, and stir evenly.

Heat oil in a pan, add eggs and stir-fry over low heat.

Add bok choy.

Add black fungus. Fungus should be soaked in advance.

Add salt, chicken essence and sugar and stir-fry evenly. Add some more leeks.

Fried vegetable stuffing. Let cool and set aside.

Grab a dumpling wrapper and add the filling. Don't put too much, don't puff it up, let it flatten out a little and make it easier to cook when frying.

Don't add too much oil to the pan.

Put 50% of the oil into the dumpling wrappers and turn on the lowest heat.

Fry it over low heat until the skin bubbles.

Fry one side and then flip the other side.

Turn over several times, the filling is fried, so we only need to fry the skin until golden and crispy.

Remove from the pan and serve, it's simple and delicious.
