  1. Clean the hairtail and cut it into appropriate sections, cutting it with two or three slashes at an angle.

  2. Cut onion into sections, slice ginger and garlic.

  3. Put the hairtail fish into a small basin, add salt, cooking wine, half of the ginger slices, and green onions and marinate for half an hour.

  4. Put the marinated hairtail into the oil pan and fry until browned on both sides and take out.
