The Invincible Rice Killer【Soy Eggplant】
Overview
In order to make this eggplant with minced pork sauce, I looked up N methods, and finally improved it to make a healthy version of eggplant with sauce that is invincible for rice. Authentic sauced eggplant must be fried twice in oil until golden brown, but eggplant is the most oil-loving vegetable. Instead, I coated the eggplant strips with a thin layer of starch, and then directly stir-fried them in a wide range of oil until golden and soft. In addition, eggplant and seafood are a natural match. Our local dish is fried shredded eggplant with shrimp paste and is very famous. Therefore, I improved the sauced eggplant and added my homemade XO sauce from seafood. The sauced eggplant tasted more delicious and rich, and the sauce was full of fragrance. It was really an invincible rice killer. This dish was praised by my parents.

Wash the eggplant and cut it into slightly wide strips, add salt, mix well and marinate for 10 minutes.

Remove the water from the salted eggplant strips and mix in the starch, so that each eggplant strip is lightly coated with starch. Heat oil in a pan, add the eggplant strips, and stir-fry until yellow and soft.
