Mix the dough ingredients and knead into a smooth and fine dough (knead more) and let it rest for about 20 minutes.

Take it out and continue kneading for 5 or 6 minutes. Roll into a round cake shape, grease both sides with oil and cover with plastic wrap for about 20 minutes.

When making noodles, prepare vegetables, bean sprouts, wash them, and chop chives.

Bring water to a boil in a pot. Apply a little oil on the cutting board, roll out the dough slightly and cut it into wide strips (if you like thinner ones, cut it into thinner strips)

Take one of the noodles and flatten it with the palm of your hand. Use both hands to stretch the noodles outward at the same time using the strength of your wrists. While stretching, shake the noodles up and down.

Stretch the noodles until they are as wide or thin as you like, then put them into a pot of boiling water.

Add bean sprouts and green vegetables and bring to a boil. Meanwhile, boil vegetable oil in a wok.

Put the noodles and side dishes into a bowl, add minced garlic, chili powder, and chopped chives in sequence.
