QQ Roupi
Overview
In the refrigerator are some leftover meat skins from cooking some time ago. I originally planned to make pork skin jelly, but I changed my mind temporarily. Fry it, the name is QQ Roupi. I remember there was a snack called QQ candy, right? It's chewy, I think, the pork skin should be like this when fried. O(∩_∩)O

Wash the meat skin, put it in the pot, and cook until it is as soft and hard as you like. This can be adjusted according to your own preference. I cooked it for about 20 minutes.

Slice onions, ginger, dried chilies. (Okay, I admit it, since I sharpened my kitchen knife a few days ago, I really like shredding⊙﹏⊙b) Slice the garlic.

Remove the hair and fat from the cooked pork skin and cut into strips, and cut the bell pepper into shreds. My skin was already hairless when I bought it, and this time only some fat was removed.

Heat the pan with cold oil, first put in the excess fat and simmer over low heat until it becomes oily residue.

Add a spoonful of Pixian bean paste and stir-fry the red oil.

Add onion, ginger, garlic, dried chili, Sichuan peppercorns and appropriate amount of sugar and stir-fry until fragrant.

Add the meat skin and fry for a while. Don't fry for too long, otherwise the water will dry out and it will become hard.

Add bell pepper and mix well.

Add cooking wine, soy sauce and vinegar, appropriate amount of salt, turn off the heat, add MSG and bring to the pot.
