My dumpling wrappers: I made four colors of wrappers, white, yellow, red, and green, and used a total of 500 grams of flour. Since white is the primary color, I didn’t take any pictures. My dumpling filling: The raw materials I use are mutton, celery, sauerkraut, and then add some green onions and ginger. Chop the meat into the stuffing, chop the sauerkraut, squeeze it with your hands to keep the juice for use, then blanch the celery in a hot water pot, take it out and chop it, squeeze out the juice (you don’t need this celery juice), chop the green onion and ginger, put these ingredients together, and then Add salt, pepper, dark soy sauce, Sichuan pepper powder, chicken essence, a little sugar, fennel, a little sesame oil, salad oil, and then put some of the sauerkraut juice in front, stir in one direction to make the stuffing vigorous, and it's OK.
