Heat the pan with cold oil over low heat and sauté the chili peppers and Sichuan peppercorns until they change color. Add the bean sprouts and stir-fry until cooked through. Remove from the pan and serve on a plate.

Add oil to the original pot, stir-fry the chili pepper and Sichuan peppercorns over low heat, add chili sauce and continue to stir-fry the red oil. I used homemade chili sauce. Add beer and hot water to boil, remove the base ingredients, add blood tofu, sausage, eel, hairy tripe and fat sausage, bring to a boil over high heat, then simmer over low heat for 5 minutes until cooked.

Take it out and put it on a plate and pour in the original soup. Sprinkle a little crushed peppercorns, chili powder and sesame seeds, drizzle a little sesame oil on top, and then pour boiling oil on it
